In the "running.bats" BATS script, we need to make sure that the directory is created in setup and torn down in the teardown. In the test invocation, after starting the service, the various log files that the Shib IDP process writes should all be there.

Even ahead of actually starting the Shib IDP service, we can test if the tomcat logs are written in an appropriate way. Perhaps modify and commit start.sh or make it start-with-volume.sh and verify the log files come to exist.
